Delicious Salad

Healthy and tasty.

Ingredients

  • 3-5 tomatoes (any kind preferable)
  • 2 cucumbers (peeled or left with the skin on, depends on what you like)
  • 15 – 25 olives (green stuffed olives preferably) 
  • cheese (15 slices of fetta or 10 halved boconcini or both)
  • lettuce (any kind)
  • Carrot (optional)
  • Avocado (1/2 or full)

Method

1. shred up lettuce and put into a bowl
2. Wash lettuce and drain through to get rid of any bug spray, dirt or bugs
3. slice up tomatoes into 8 pieces each and put into the bowl
4. half the cucumbers and slice the halves into four sticks each half
5. dice the sticks of cucumber into small chunks and add into the salad
6.  add in any olive you like but preferably the green olives
7. grate in  carrot (optional)
8. add in your type of cheese
9. slice up the avocado the same way you would with a mango and put in

Dressing Ideas

You will need:

  • balsamic vinegar
  • white wine vinegar ( same amount as balsamic vinegar)
  • drizzle with olive oil
  • about 3 pinches of salt
  • drizzle with cracked pepper
  • add oregano

makes a good dressing or you could stock it up in a bottle and use it whenever you want (p.s shake well before use to mix flavor)
