Mixed vegetable salad with peanut sauce.

The Indonesian traditional foods have faced many challenges from modern foods. But actually the modern foods are much fattier than traditional foods. Due to the high risk threatening the health, people are considering to adopt the back-to nature style and the famous Indonesian cuisine recipes is Gado-Gado (Mixed Vegetable Salad with Peanut Sauce)

Gado-Gado (Mixed Vegetable Salad with Peanut Sauce)

Ingredients

100 g string bean, cut 2 cm long, boiled, drain

100 g spinach, cut, boiled, drain

100 g Tempe (fermented soybean), cubed small, fried

50 g bean sprouts, blanched, drain

200 g potatoes, cubed small, fried

3 eggs, boiled

400 ml coconut milk

2 Salam leaves/ bay leaves

1 tbsp tamarind juice

3 kaffir lime leaves

100 g fried peanuts

1 tsp sliced red chili

4 capsicums

1½ tsp salt

1 tsp shrimp paste

2 tbsp brown sugar

50 g fried “emping” crackers

50 g fried shrimp crackers

Fried sliced shallots

Preparation

-To make peanut sauce: blend peanut, red chili, capsicums, salt, shrimp paste, and brown sugar together into a paste. Add coconut milk, Salam leaves, tamarind juice, and kaffir lime leaves. Bring to boil until the thickness of the sauce as desired, set aside.

-On a salad plate: arrange vegetables, potatoes, tofu, and tempe. Pour peanut sauce on top. Serve with emping crackers, shrimp crackers, and sprinkle with fried shallots.

*Emping: fried chips made of Gnetum gnemon fruit

*Serves : 5

*One serving : 410 Calories
