Fast and Easy Recipes From The Past
The following recipes are fast and easy, and they are very tasty. Instead of cooking the same old thing, try something a bit different. Replace or spice up those boring dishes we all get used to making. So, to get out of the rut, try one of these little recipes which will delight even the fussiest eater.
Dilled Potatoes
This recipe includes a little flavor trick from the Scandinavians. Peel cooked small new potatoes and roll in melted butter. Add a mixture of minced fresh or dried dill and parsley.
Golden Salad Dressing
This is quite different and very continental. Mash the yolks of 2 hard-cooked eggs in 1/4 cup of vinegar. Add a pinch of sugar, dry mustard, salt and freshly ground pepper. Add 1/2 cup salad oil. Mix well and serve on salad greens.
Tuna Potato Pie
This is better than plain creamed tuna. Make creamed tuna as usual with 2 cups cream sauce or thinned cream of mushroom soup. Make up 2 packets instant mashed potatoes-keep them dryish. Put half the potatoes in greased casserole, top with tuna. Cover with the rest of the potatoes in bug puffs. Sprinkle with cheese and bake a few minutes, until browned.
Mushroom Steak Sauce
This tastes like a pro chef created this sauce. Blend 1 teaspoon cornstarch into liquid from a can of butter-broiled mushrooms. Add the mushrooms, 1/2 teaspoon bottle steak sauce, 1 tablespoon each butter and dry red wine. Cook and stir until slightly thickened. Add minced parsley.
East-West Eggs
Try these for a week-end brunch. Blend into 8 lightly-beaten eggs; 1/2 cup cream or evaporated milk, one can drained minced clams, few dashes Tabasco sauce, salf and pepper to taste. Heat a thin film of butter or margarine in large heavy skillet. Add eggs and cook gently over low heat stirring lightly, only until eggs are still moist and soft looking. Stir in 1 diced, soft avocado just before serving.
Minute Pizzas
These treats are made in minutes. Roll canned refrigerator biscuits into thin 3 1/2 -inch rounds. Spread each with olive oil, tomato paste or sauce. Sprinkle with crushed oregano, garlic salt, top with bits of anchovies, pieces of mossarella cheese. Bake at 475 degreees about 15 minutes. Serve warm.
