Flank Steak W/ Couscous

It takes just min. to broil this nicely seasoned flank steak that’s served w/ made-in-minutes couscous. Slicing the meat on an angle across the grain produces the most tender results.

Prep/Total Time: 25 min.

1 tsp. olive oil

1 tsp. minced garlic

1/2 tsp. Italian seasoning

1/4 tsp. pepper

1/8 tsp. salt

1 beef flank steak (1 lb.)

2 pkgs. (5.8 oz. ea.) roasted garlic & olive oil couscous

3/4 c. diced roasted sweet red peppers, drained

1/2 c. Italian salad dressing

In sm. bowl, combine 1st 5 ingredients; rub over flank steak.  Place on broiler pan.  Broil 4″ from heat for 7-8 min. on ea. side or til meat reaches desired doneness (for med.-rare, a meat thermometer should rad 145 deg. F.; med., 160 deg. F.; well-done, 170 deg. F.).

Meanwhile, cook couscous according to pkg. directions.  Stir in roasted peppers.  Thinly slice steak across grain; drizzle w/ Italian dressing.  Serve w/ couscous.

Yield:  4 servings.
