Fresh Spinach, Artichoke, and Mandarin Orange Salad

Spinach contains very large amounts of vitamins and minerals, especially in comparison to lettuce.

Ingredients

1-pound package fresh spinach
1 4-ounce jar marinated artichoke hearts
1 small can mandarin orange sections
2 tablespoons almond slivers
2 tablespoons balsamic vinegar

Procedure

Wash, de-stem, and break the fresh spinach into bite-sized pieces. Empty the contents of the artichoke jar into the salad (except for 2 tablespoons of marinated oil, which is to be discarded). Add the mandarin orange slices, vinegar, and almonds. Toss lightly and serve. Serves 8.

    If I eat this recipe every day then I will never lack iron in my life because spinach is very good source of iron. Currently, I take iron tablets every day to keep myself away from anemia and low hemoglobin.
