Fresh Summer Berry Salad

Enjoy this unusually delightful blend of berries and condiments without the guilt. Great for the brain and full of antioxidants, this will go down wonderfully after a hard workout.

Ingredients

  • 1 pint fresh strawberries, sliced
  • 1 cup Blueberries
  • 1 cup fresh Raspberries
  • 1 Tbs honey
  • 1 tsp Dijon mustard
  • 1/4 cup raspberry vinegar
  • 2 Tbs Red Wine Vinegar
  • 1/2 cup light olive oil
  • 1 cup crumbled feta cheese
  • 1 cup chopped pecans
  • 1 head romaine lettuce, torn
  • 1/4 cup sesame seeds
  • 1/4 tsp salt
  • 1/4 tsp cracked pepper

Method

  1. In a skillet over medium-high heat, toast the pecans and sesame seeds, stirring frequently,  until lightly toasted. Remove from heat, and set aside.  
  2. In a large bowl, toss together the toasted pecans, sesame seeds, romaine lettuce, berries, and feta cheese. Cover with the dressing mixture, and toss to serve.

Dressing

In a seperate bowl, prepare the dressing by whisking together the honey, Dijon mustard, raspberry vinegar, Red Wine Vinegar, olive oil, salt, and cracked pepper .

    I tried that minus the raspberry vinegar and substituted the cheese with cottage cheese. still good though.
