Fresh Tomato Basil Salad

This salad is light and refreshing and great on the waist line perfect for a hot summer day on some whole grain freshetta bread.


Ingredients

  • 4 tomatoes, cut into bite-sized pieces or equal amount of cherry tomatoes cut in half 
  • 1 large garlic clove crushed
  • 1 cup fresh basil coarsley chopped
  • 1/2 red onion thinly chopped
  • 1/4 cup extra virgin olive oil
  • 1/4 cup white wine vinegar
  • 1 large lemon squeezed
  • 2 tsp lemon zest
  • 1 tablespoon dried oregano
  • 1 tsp salt
  •  1 tsp black pepper

Method

Combine vegetables in a large bowl. Pour in the olive oil, lemon juice, vinegar, and the rest of the ingredients; stir gently to coat the vegetables. Allow to marinate for an hour in the refrigerater before serving.

For a complete meal enjoy this salad with some feta cheese.
