Fruit Salad on a Stick (Fruit-kabob)

This is an easy and fun way to serve fruit at your next cook-out and a way to get the kids to eat and try new fruit. It is also quick, easy and fun to make. The kids will even enjoy helping you make them.

FRUIT SALAD on a STICK (Fruit-Kabob)

You will need several kinds of fresh fruit to start, just as you would for a fruit salad.  I usually use a combination of cantaloupe and honeydew melon, fresh strawberries, fresh pineapple and seedless red grapes.  You will need several bamboo skewers to make your kabobs.

Peel and cut your cantaloupe and honeydew removing seeds and cut into bite size chunks. Hull your strawberries and cut in half lengthwise. Slice your pineapple into bite size wedges.  Remove stems from grapes and leave whole.

Now spear the fruit onto your kabob skewers alternately

Cantaloupe, Strawberry, Pineapple, Grape, Honeydew

Repeat in the same pattern until you have filled your skewer

ending with a final piece of cantaloupe or whichever fruit you started with.

Leave about 1 inch of skewer on each end to handle.

Place on a tray to serve with hard cheese and a fruit dip

Dip

Whip together until light and fluffy

1-8 oz pkg. Cream cheese soften

2/3 cup light brown sugar

2 Tbsp. honey

2 Tbsp. apple juice or cider

1/2 tsp. vanilla extract

When mixed place in bowl to serve with fresh fruit

Any leftover fruit or dip can be stored in the refrigerator to eat later.

    I would really REALLY love to have a fruit kabob about now! This is very inviting and I wish I could have seen a photo but what is in my mind right now is lovely! Especially the cream cheese Dip! Wow! Bravo!
