Fruit Salads

Try a refreshing fruit salad recipe! These are wonderful to take to your next event or to just enjoy yourself!

Fabulous Frosted Salad

2 packages lime Jello

#2 can crushed pineapple, drained

2 bananas

2 cups mini marshmallows

1 egg yolk

1/2 cup sugar

2 tablespoons flour

1 cup pineapple juice (add hot water to make 1 cup)

1 cup Cool Whip

Nuts (optional)

Prepare Jello according to package directions.  Allow jello to set and then add pineapple, bananas, and marshmallows to Jello.  Spread in a 9 x 13 inch cake pan.  Beat egg yolk, sugar, flour and pineapple juice.  Cook until custard-like.  Cool and add Cool Whip.  Spread on firm jello.  Sprinkle with nuts if desired.

Bountiful Fruit Salad

4 cups torn mixed greens

1 medium apple, chopped

1/2 cup raisins

1/2 cup chopped dates

1/2 cup slivered almonds

1/2 cup shredded carrots

1/2 cup shredded coconut

1/2 cup mayonnaise or salad dressing

1/2 cup sour cream

1/4 cup orange marmalade

1 tablespoon milk

Combine salad greens, apple, raisins, dates, almonds, carrots and coconut in large bowl mix well.  Chill in refrigerator.  Combine mayonnaise, sour cream, marmalade and milk in small bowl mix well.  Chill until serving time.  Add dressing to salad; toss lightly to coat.

Cheesy Pear Salad with Walnuts

1/2 cup oil

3 tablespoons vinegar

1/4 cup sugar

1/2 teaspoon celery seeds

1/4 teaspoon salt

1/4 cup walnut halves

4 cups torn lettuce

1 pear, sliced or chopped

2 ounces bleu cheese

Combine oil, vinegar, sugar, celery seeds and salt in jar with a tight-fitting lid; shake to dissolve sugar and mix well.  Chill in refrigerator.  Spread walnuts in baking dish.  Bake at 375 degrees for 3 to 5 minutes or microwave on High for 3 to 4 minutes or until golden brown, stirring occasionally.  Combine walnuts with lettuce, pear and bleu cheese in salad bowl.  Add dressing at serving time; toss lightly to coat well.
