Fruity Cucumber Salads That Also Have a Minty Kick
Crunchy and watery cucumbers always taste great in summer salads. Such salads will taste even more refreshing if they are given a fruity kick and minty punch.
Here are three easy healthy recipes for cucumber salads. These salads are high in fiber and water content as they are prepared using fruits and cucumbers. You can have them for lunch or breakfast during hot summer months.
Whisk a few tablespoon of lime juice with honey, olive oil, salt, pepper and crushed mint leaves. Now add some cucumber wedges in this bowl. Roughly chop an orange, sweet lime or any other citrus fruit into bite sized pieces and add them into the bowl. Mix all the ingredients well and serve.
Raspberries and strawberries also taste good with cucumbers. Chop any one of these fruits into wedges and mix them with cucumber pieces. Now, make a dressing by mixing salad oil, white wine vinegar, salt, pepper and grated ginger. Mix the chopped fruits and cucumber in this dressing and serve.
Cut grapes into halves. Chop cucumbers into rounds and then cut them into halves. Then, mix together crushed mint leaves, olive oil, vinegar, garlic powder and salt. Combine all these ingredients in a bowl and serve them chilled.
