Gazpacho Soup Easy
A simple healthy Spanish dish, easy to prepare, a healthy refreshing cold soup for a hot day.
Ingredients
1kg ripe tomatoes, roughly chopped
1 lebanese cucumber, peeled, deseeded and roughly chopped
2 cloves garlic, crushed
1 salad onion roughly chopped
half loaf / 200grams sour dough bread
1/2 cup balsamic vinegar
.5litre bottle of passata and 1.5 litres water or
2litres tomatoe juice
salt and pepper
Tabasco sauce
olive oil to serve
Dressing
Capsicum
Chillies
Shallots
Cucumber
Salt and Pepper
Preparation
1. Mix all ingredients in a bowl, blend batches and place in clean bowl. Refrigerate minimum 2 hours.
Can add ice cubes before serving to get really cold.
2. Before serving thinly slice dressings and offer on a plate.
3. Serve in bowls or glasses and offer dressings.
