Gnocchi, Delicious and Fast
Dont have much time to cook and the family is hungry? This fast and delicious gnocchi dish is a winner, the entire family or friends will love it.
This would have to be one of the fastest and most delicious gnocchi to serve as a main course to the family. All you need are these simple ingredients.
One packet commercial gnocchi
One medium brown onion chopped up fine
One cup fresh chopped parsley
4 pieces sundried tomatoes chopped into small pieces
4 tablespoons pure olive oil
Pepper
Parmesan cheese or Fetta cheese
In a large non stick fraying pan, fry the onion until soft. Add the parsley and the sundried tomatoes and gently stir until they are well mixed, sprinkle some black pepper. On very low heat let cook for a few minutes until the tomatoes are soft (about 3 to 4 minutes should do) Set aside.
Bring to the boil a medium saucepan filled up to ¾ with water (not up to the brim please) When the water reaches the boil add one teaspoon oil and gently add the gnocchi. As soon as the gnocchi rise to the surface take out with a slotted spoon making sure there is no water left in them and add to the waiting fraying pan. (Please dont let the gnocchi boil too long or they will become hard) When all the gnocchi are out, mix gently until well covered with the mixture. Serve in individual plates sprinkled with either Parmesan cheese or crumbed Fetta cheese. This dish does not require salt.
Serve immediately with a simple green salad which you will have prepared before hand
