Greek Salad with Feta Cheese

A healthy, delicious Mediterrean Salad with a crisp, summery flavor. This is an authentic Greek salad, served the way the Greeks themselves would serve this salad.

Ingredients:

One cucumber, peeled and sliced
One large or two small tomatoes,cut in bite size pieces
Half red onion, sliced
Crumbled Feta Cheese (goat cheese) about a quarter cup
Two tablespoons Extra Virgin Olive Oil
Two tablespoons Red wine vinegar
Kosher salt about a teaspoon
Half teaspoon freshly ground black pepper
Ciabatta bread

Put sliced cucumber, tomato, and feta into a bowl. Mix together lightly. Add olive oil and vinegar, and sprinkle the salt and pepper to the salad.Add red onion to the top. Serve with a slice of the ciabatta bread.

Serves one or two, depending on how hungry you are!
