Chris I was wondering if you have ever gone to culinary school or owned a restaurant? Your statement is beyond incorrect according to my expertise considering I own 2 restaurants specializing in Greek and Italian.

If fresh vegetables are mixed with vinegar or oil, they are preserved much longer and the oil itself infuses the flavors.

Orzo is Pasta

Objection! Better consume salads especialy those with fresh vegetables imediately after the preperation! Of course by the way you propose as outcome we recieve a better blend of smells and tastes, but what about oxidation of ingredients? Also, what is Orzo?

Thanks for the comments everyone. By the way Jo, you can put this mix inside a tortilla and make a wrap out out of it. So yummy!

Thanks for the pic. Great visual of what this amazing salad looks like. Only thing I really do not care for the texture of Feta cheese....wonder if it would still be good with a sub? Any suggestions?
