Grilled Chipotle Adobo ^ Pork Tenderloin

GRILLED CHIPOTLE ADOBO ^ PORK TENDERLOIN.

2  (1-pound) pork tenderloins Ѕ teaspoon salt

Уъ tablespoon pepper

3 tablespoons fnely chopped chipotle chilies Уъ cup plain yogurt

2 tablespoons adobo sauce

3  cloves garlic, minced 1 tablespoon olive oil

Place tenderloins in a shallow dish. Make a slit down the middle of each one without cutting through it. Season with salt and pepper, and fll each slit with chipotles. Press tenderloins so that chilies will not slide out. Set aside.

In medium bowl, mix yogurt, adobo sauce, garlic, and oil until well combined. Pour mixture over tenderloins and let stand for 15 to 20 minutes.

Preheat grill for medium-high heat. Place tenderloins on oiled grill rack and cook for 10 to 12 minutes a side. Baste occasionally with yogurt sauce. When internal temperature of tenderloins reaches 150 degrees, remove from grill and let stand for 5 minutes.

Yield: 6 to 8 servings
