Healthy Fast Food Recipes – Chicken Ceasar Salad

Have you ever felt guilty for scoffing a big mac burger during a fast-food binge? Your not the only one. Snacking on a double serving of a greasy, meaty burger, drenched in creamy, fatty cheese, spread between three layers of a white, sesame bun… But, in reality, these kings of the burger universe contain less calories and fat than a MacDonalds Crispy Chicken Ceasar Salad. Unbelievable? The tale only worsens…

Each crispy chicken salad, with croutons and dressing contains a whopping 36g of fat – over half of your daily reommendations! To make matters worse, it also contains more calories than the Big Mac – an amazing 520- in a salad – and that is without extra side orders/drinks! Your amibitions of achieving a low calorie, waistline friendly lunch have officially been shattered! However… do not fear! The below recipe is specifically designed to recreate the taste of the MacDonalds variety – without the saturated fats and mega calories!

Ingredients:

  • 1 large head of romaine or iceberg lettuce, in small, wafer thin pieces
  • 2 cups of cooked chicken breast – without excess skin (which is high in fat)
  • 1/8 cup freshly grated parmesan cheese
  • 1 cup of croutons (make your own: roast 1 or 2 slices of bread with a drizzle of  olive oil, cut in to cubes and roast)
  • Dressing:
  • 1/3 cup helmans extra light mayonaise
  • 2 tbsp fresh lemon juice
  • 1 tsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp fresh basil
  • 1/2 tsp of freshly ground black pepper
  • 1 crushed clove of garlic
  • Method

    1. Place the chicken and croutons upon a bed of the romaine lettuce, in a salad dish.
    2. Sprinkle the parmasan cheese equally over the chicken and crouton topping.
    3. Create your dressing by blending the remaining ingredients or whisking them together by hand.
    4. Drizzle this mix over the salad and toss with the other ingredients, ensuring a fine even coating
    5. Dig in!

    Unbelievably, this healthy, exceedingly delicious alternative to the classic American MacDonalds salad, contains just 150 calories per serving – meaning a double portion would still contain roughly 200  calories less than the fast food equivalent.
