Heavenly Salad

This classic holiday treat as been a part of my family’s Christmas Dinner for over fifty years. However, a few tweaks have cut some of the calories.
Combine the following ingredients in a two quart sauce pan:
- One medium can of crushed pineapple
- One 8-ounce package low-fat cream cheese, cut into chunks
- One 6-ounce package low-calorie gelatin (Do not add water to the gelatin!)
Place sauce pan over low heat, mashing up the chunks of cream cheese as they melt. Continually stir the mixture, ensuring it is well mixed.
After the cream cheese mixture has full melted, it needs to cool before adding the remaining ingredients:
- One and 1/2 Cup of chopped pecans or walnuts
- Small bottle maraschino cherries
- One Cup chopped celery
- 1/2 pint whipping cream, whipped
Place mixture in a buttered dish or mold. This salad stays firm for several days.
