My friend’s mother made the absolute best chicken salad.  She made it in large batches and froze it.  I always hoped when I was there she would thaw out a container of the delicious stuff for lunch.  I always wanted to make that same chicken salad.  I could make all sorts of varieties of chicken salad, that were usually quite good.  Curried chicken salad with apples and cranberries, a chicken salad with pineapples and nuts, and more are all great, but I wanted that traditional chicken salad that my friend’s mom made.  Of course, the stuff you buy in the store is not even palatable. 

Perfect chicken salad does not have grapes in it.  Perfect chicken salad is so good that it is even better the next day.  Perfect chicken salad has recognizable pieces of chicken in it, and a sweet, but tart taste.  Of course, it has to crunch! 

Here is a recipe that will help you make perfect chicken salad.  It is impossible to mess it up, if you follow the directions exactly. 

Ingredients:

Frozen BONELESS Chicken, cooked to equal 3 1/2 cups

Onion:  2 cups chopped

Celery:  1 cup chopped

Bread and Butter Pickles, chopped:  1 cup

mayonnaise:  1 cup

Mustard:  2 Tablespoons

Vinegar:  2 Tablespoons

Sugar 2 Tablespoons

Salt and pepper, and a sprinkle of celery salt if desired.

Instructions: 

Flake the cooked chicken with your hands.  There is no other way to get it the right way for perfect chicken salad.  So, roll up your sleeves!

Add the finely chopped onion, celery and pickles.   Mix with your hands again. 

In a separate bowl, mix the remaining ingredients.  Add to Chicken mixture, stir and chill.
