A delicious recipe of an exotic salad with imitation crab meat and mangoes including sumptuous pictures of the real thing.
Kani Mango Salad Medley
I tried the Kani Mango salad at a restaurant in the mall. It was really good. The salad was fresh and crisp. I enjoyed the combination of the salty taste of the Kani or crab meat (imitation crab meat only) and the tangy sweetness of the mango….mmmm. This is when I thought to myself, “Hey I’ve got to make this salad at home.” And so I did….
For this one, though, I didn’t make it exactly like the one from Karate Kid Restaurant. I put the same ingredients such as the lettuce, imitation crab meat (which you can easily buy at the frozen food section in the grocery), croutons (which i made myself from extra toasty bread), mangoes, tomatoes, and cucumber. But to make it more filling I added shredded chicken breast (which I initially boiled with a cube of Knorr chicken cube
ahead of time). I also drizzled it with my own choice of dressing (Caeser Salad Dressing) instead of Karate Kid’s white Japanese Mayo dressing.
I really enjoyed this salad. It really filled me up and it seems to be healthy. I’m sure I’ll be making this salad again very soon….

It does look scrumptious. Unfortunately for me, I’m one of the Cooking for Dummies type. Would you happen to have a dumb-proof recipe for this? I would love to prepare it for my husband!

sorry for the late reply. I don’t really have an actual recipe for this. I sort of just chopped up veggies like lettuce, tomatoes, carrots and a fruit like mango (you can replace the mango with a sweet fruit that is available in your location like apples, or grapes, or even oranges if you like a citrus taste to it).
Then get some cooked chicken (this can be chicken from fast food places like KFC if you don’t have time to cook your own) and shread them or chop them up in small bite size pieces.
If you have imitation crab meat, you can chop that up and throw it in the mix (You can usually buy imitation crab meat in the frozen food section in the grocery).
Just toss all the ingredients together including croutons if you have some, drizzle with your favorite salad dressing (Ceasar salad dressing is good with this) and your ready to eat!
