Light & Zesty Rotini Salad with Vegetables

This pasta salad has only a little fat, but a lot of taste. Add any raw veggies you like. It can only get better.

Ingredients

  • 1 lb Rotini pasta cooked
  • 1small Green Pepper chopped
  • 1 small Red Pepper chopped
  • 1small Red Onion thinly sliced
  • ½ large Seedless cucumber chopped
  • 12 Cherry Tomatoes cut in half
  • ½ cup sliced raw white Mushrooms
  • ½ – 3/4 cup crumbled Feta Cheese
  • 1 ½ tbsp Extra Virgin Olive Oil
  • 6 fresh Basil leaves slivered
  • juice of one lime
  • juice of one red Grapefruit /aprox 1/3 cup( orange juice will do)
  • 1 ½ tbsp Grainy or Dijon mustard
  • 1 tbsp liquid Honey
  • 1/4 tsp Worcestershire sauce
  • Salt and Pepper to taste

Method

  1. Mix cooked , cooled pasta in a large bowl with vegetables
  2. In a separate bowl combine remaining ingredients except Feta together and mix well
  3. Pour mixture over the Rotini and Vegetables and toss until coated
  4. Add Salt and Pepper if needed
  5. Top with crumbled Feta
  6. Serve just a little cooler than room temperature
