Mango, Pineapple and Grapefruit Salad with Yogurt Dressing
This serves two as a main course.
Ingredients
- 1 cup cubed mango (1/2-inch cubes)
- 1 cup grapefruit segments, preferably pink, all white skin and membrane removed
- 1 cup 1/2 inch pineapple cubes
- 4 tablespoons collected juice from cutting the grapefruit and pineapple
- 1/2 cup plain yogurt (regular, low-fat, or nonfat)
- 2 tablespoons honey
- 1 1/2 teaspoons poppy seeds
Method
- Very gently mix together the mango, grapefruit, and pineapple in a bowl. Take care not to crush the pieces.
- Whisk together the juice, yogurt, 1 tablespoon honey, and half the poppy seeds.
- Spread the sauce onto plates. Leave some plate visible around the border.
- Evenly distribute the fruit mixture on top of the yogurt. Drizzle the remaining 1 tablespoon over the fruit and yogurt. Sprinkle with the remaining poppy seeds and serve at once.
( To cut the mango, place the fruit on a cutting board. Using a thin, sharp knife, cut off the top third horizontally, cutting around the large, flat seed. Turn the mango over and repeat. If the flesh on the outer edges of the seed is not too firbrous, cut it away and slice it thinly. Otherwise, do not use it for this salad. Cut each of the thirds in half lengthwise and remove their skin, much the way you would the rind of a lemon. Cut into 1/2-inch cubes.
