Mediterranean Burgers

Burgers don’t have to be junk food. Made, using only the best of ingredients, these scrumptious home-made Mediterranean burgers certainly have oodles of intoxicating flavors and aromas with which to allure you, making them ideal for barbeques and quick and easy family meals or casual entertaining.

Mediterranean Burger Ingredients:
- 250g of Lean Pork Mince
- 250g of Lean Beef Mince
- 30g of Fresh White Breadcrumbs
- 8 Soft Sun-Dried Tomatoes
- 4 Hamburger Buns
- 2 Cloves of Garlic
- 1 Onion
- 2 Tablespoons of Finely Chopped Pine Nuts
- 2 Tablespoons of Chopped Fresh Basil
- Freshly Ground Sea Salt (for seasoning)
- Freshly Ground Black Pepper (for seasoning)

Method:
- Peel and finely chop the onion
- Peel and crush the garlic
- Chop the soft sun-dried tomatoes medium fine
- Cut hamburger buns in half but leave a small section uncut to act like a hinge
- In a large mixing bowl, combine the lean beef mince, the lean pork mince, the crushed garlic, the finely chopped onion, the finely chopped pine nuts, the chopped sun-dried tomatoes, the chopped fresh basil and the breadcrumbs
- Season to taste with some freshly ground black pepper and freshly ground salt and mix well
- Divide the burger mixture into 4 roughly equal portions
- Shape each portion into uniform rounds (9cm in diameter and 2cm thick) and flatten slightly
- Grill under a high heat or on the barbeque for 10-12 minutes or until golden brown, turning once
- While the burgers are cooking toast the hamburger buns
- When the burgers and the buns are ready simply assemble your Mediterranean burgers and enjoy

Serving:
- Serve with a capsicum, onion and olive salad
- Alternatively, serve with grilled corn on the cob and toasted chunks of ciabatta
- Complimentary side dishes include: chunky potato chips, potato wedges, lettuce-based salad, coleslaw, rocket and cherry salad, Mediterranean potato salad, basil pesto, pasta salad, boiled or steamed vegetables and tabbouleh
- Popular condiments commonly used with Mediterranean burgers include mustard, garlic sauce, mayonnaise and ketchup
