Mom’s Chicken Salad
published by Evie McDonald on Dec 14, 2009
My family’s recipe for chicken salad combines a lot of wholesome ingredients that will make it a family favorite both for summer picnics and for holiday buffets.
- Two Cups cut-up cold chicken (cut into large chunks)
- One Cup chopped celery
- One t. lemon juice
- Salt and pepper to taste
- 3/4 Cup chopped pecans, walnuts, or almonds
- 1/3 Cup cut-up sweet gherkin pickles
- Two or three cut-up hard-boiled eggs
- 1/2 Cup low-calorie mayonnaise
Left over turkey, of course, can be substituted for chicken, so this makes a great way to use left overs from Christmas Dinner.
