Mom’s Chicken Salad

My family’s recipe for chicken salad combines a lot of wholesome ingredients that will make it a family favorite both for summer picnics and for holiday buffets.

  • Two Cups cut-up cold chicken (cut into large chunks)
  • One Cup chopped celery
  • One t. lemon juice
  • Salt and pepper to taste
  • 3/4 Cup chopped pecans, walnuts, or almonds
  • 1/3 Cup cut-up sweet gherkin pickles
  • Two or three cut-up hard-boiled eggs
  • 1/2 Cup low-calorie mayonnaise

Left over turkey, of course, can be substituted for chicken, so this makes a great way to use left overs from Christmas Dinner.
