Mom’s Dressing and Sauces

This home-made salad dressing is different, crisp and can be a meal of it’s own (weird to say). Xtra recipes for you follow. Enjoy.

Cucumber Salad Dressing:

Ingredients:

1 large onion, diced
1 cube of beef bouillon
5 hard-boiled eggs, chopped finely with fork
Vinegar to taste
¼ C. sugar
2 Tbsp. butter
Pinch of salt
Pinch of pepper
½ C. mayonnaise
4 cucumbers

Preparation:

Fry diced onion in butter till half cooked. Remove from stove. Add eggs, sugar, salt, pepper, bouillon, vinegar, and mayonnaise. Refrigerate unto cold. On a bed of lettuce, arrange sliced cucumber and cover with the dressing.

Fresh Salsa:

Ingredients:

Juice of 1 large lime
5 medium tomatoes, chopped
Cilantro to taste
4 jalapenos, finely chopped
½ onion, chopped
Salt to taste

Mix all ingredients together. Refrigerate.

Peanut Sauce:

Ingredients:

1 onion
1 stalk lemon grass, crushed
3 Tbsp. peanut butter
1 Tbsp. lemon juice
30 g. dark brown sugar
1 Tbsp. cooking oil
20 ml. dark soya sauce
1 tsp. hot chilly paste
1 tsp. coriander
Coconut milk or water
1 tsp. cumin

Preparation:

Finely dice onion. Put oil in small saucepan and soften onion; add all other ingredients except coconut milk/water. Slowly heat on low, adding liquid as required to make it into a smooth sauce. Remove lemon grass before serving.
