Mom’s Potato Salad

Recipe mom handed down long ago.

Ingredients

  • 5 to 6 Potatoes – Cooked, and cut up
  • 10-12 Eggs – Cooked, and cut up all but 2
  • 1 Med Onion – Cut up fine
  • 2-3 Celery – Cut up
  • 1 Dill Pickle – Cut up
  • 1-2 Sweet Pickle – Cut up
  • Miracle Whip Salad Dressing
  • Paprika

Method

  1. Combine above in large bowl,  add salad dressing,  Cut 2 Eggs place on top,  A a few Celery Leafs,  Sprinkle with Paprika

{I also found that my family like to have a dash of mustard added to ours,   try it }

    Sounds like my mother’s recipe only she used mayonaise.

    I found it interesting that there were more eggs then potatoes, I will have to try it.; I love potato salad, and I like to try different ways of making it. Thanks for sharing this.

    Hopefully my girls will look at this salad with lots of eggs in it, trying hard to get them to eat salad, worth trying your recipe, thanks for sharing!
