My Secret “Adobo”
If you happen to come home with me, you will always hear me asking this every morning, "Ok, kids… What do you like for lunch now?" and they will answer in chorus, "Adobo, adobo, adobo!". Oh, how they love my adobo…
“Adobo” is one the favorite Filipino dishes. It is easy and simple to cook. But, there are many varieties of cooking adobo. You can use chicken meat, pork and beef. Chicken liver and gizzards can also be cooked or add to the dish. And now, I will share to you my secret “Adobo” recipe which my children really love to eat:
You will need:
1 kg Chicken ( breast and thigh ), washed and cut into small portions
1 clove garlic ( minced)
1 small onion (cut into small pieces)
2 tbsp. Liver spread
½ tsp. Ground pepper (can also use whole black peppers)
¼ cup soy sauce
¼ cup vinegar
½ tbsp sugar
½ tsp. Salt
1 cup of water
2 tbsp. Canola oil
Procedure:
1. Heat the pan and put on the Canola oil. Saute the minced garlic for a while, do not let it to get brown. Add the onion.
2. Put the liver spread and pressed it with ladle.
3. Put the chicken. Saute’ and mix with the garlic, liver spread, and onion. Sprinkle the salt so that the chicken will not stick onto the pan. This will enrich the flavor of the chicken.
4. Pour the Soy sauce. Add a cup of water. Cover to simmer.
5. Stir the mixture and put on the vinegar. Remember not to cover and stir it after you have put the vinegar. If so, the strong sour smell and taste of vinegar will dominate the flavor.
6. Once the sour flavor of vinegar evaporates (about 2-3 minutes), you can now stir and put the sugar. Simmer for another 3 minutes and let the sauce gets thick. Season to taste.
