Potato Salad

This is a tradition in my family for the Holidays.

Potato Salad is great for any meal, but with my family, we normally just make it around the holidays.

Ingredients:

  • About 5 lbs of potatoes, peeled and cut into bite size pieces
  • 1 med. onion, peeled, and diced ( you can also use green onion to give it color )
  • 3 – 4 hard boiled eggs, peeled and chopped
  • Miracle Whip
  • Mustard
  • Pickle relish and juice
  • Salt and Pepper to taste

Directions:

Place potatoes into a pot big enough to cover them in water, place over high heat to cook. Boil until potatoes are almost mushy, but they should still have a little bit of toughness to them. Drain all the water from the potatoes and place into a bowl big enough to hold them and 3 1/2 to 4 cups of other ingredients. Add onion, eggs, relish, and juice and mix until blended. The potatoes should start breaking down just a little but not too much. Let cool for about 10 minutes.

Add Miracle Whip, Mustard, and Salt and Pepper to taste, mix together until all is blended well. Serve with a smile and a big spoon!
