Quick Couscous Salad

This salad is really quick and simple to make, plus it’s healthy. It can be eaten straight away or prepared in advance (making it ideal for lunchboxes).

Ingredients

· 100g couscous

· Salt and pepper to taste

· Dash olive oil

· Mixed salad vegetables e.g. spring onions, tomato, cucumber, radishes

Method

· Put the couscous, with salt and pepper to taste, in a medium sized mixing bowl and add 125 ml boiling water.

· Cover and leave for 5-10 minutes, or until the water has been absorbed

· Meanwhile, wash and chop salad vegetables

· ‘Fluff’ up the couscous with a fork

· Add the salad vegetables to the couscous and mix together with a dash of olive oil

Serve and enjoy!

Variations

Use whichever salad vegetables you fancy; those listed above are just my preference.
