Rice Corn Salad
Rice Corn Salad.
Ingredients:

5 tbsp refined /olive oil
-
1 tbsp vinegar or 2 tbsp balsamic vinegar

1 tbsp lemon juice
-
1 tbsp castor sugar
-
½ tsp salt
-
½ tsp black pepper
-
¼ tsp red chili
-
¼ tsp mustard powder
-
2 tbsp onions finely cut (opt)
-
½ – ¾ tsp parsley
-
½ tsp basil
-
½ tsp celery (opt)
Method:
Mix all ingredients and mix in a mixer for two minutes or simply mix with a whisk in a bowl.
Ingredients for veggies:
- 2 – 2 ½ cups chilled rice (after boiling, spread on a vessel with a wide base and keep under a fan)
- ½ tin sweet corn
- ½ – 1 cup corn
- 1 capsicum finely cut
- 2 hard red tomatoes
- 1-2 spring onions finely cut
- 1-2 red /yellow bell peppers finely cut (optional)
Method:
- Boil rice and cool it
- Prepare other ingredients
- In a big bowl, add sweet corn
- Beat manually with a whisk so that it becomes smooth
- Mix the dressing well
- Add veggies and mix well
- Mix the boiled and cooled rice with a very light hand
- Don’t use steel serving spoon as it breaks the rice. Use either wooden / rubber spoon
- Taste and balance
- Keep it to chill in the fridge
- At the time of serving, put into a jelly mould/bowl and simply upturn it on a chilled platter so that it is shaped into a round shape.
- Decorate with corn, capsicum and tomato roses.
