Summer Greek salad.

Ingredients

  • 5 roma tomatoes
  • 1 seedless cucumber
  • 1/2 medium red onion
  • chopped fresh basil
  • purslane
  • olive oil
  • 1/4 cup feta
  • lemon
  • sea salt
  • fresh ground black pepper

Method

  1. Slice and halve tomatoes and cucumbers. 
  2. Chop onions and herbs.
  3. Cut up feta into small chunks. 
  4. Toss all ingredients in a big glass salad bowl.
  5. Drizzle olive oil and the juice of one lemon over salata. 
  6. Salt and pepper to taste.  Toss. 
  7. Chill for 15 minutes. 
  8. Serve and enjoy!
