Shredded Cabbage Salad with Cranberries and Almonds

Delicious salad recipe which is easy and quick.

This cabbage Salad with almonds and cranberries is delicious; I can polish off a bowl of this as a meal. After trying it out you may find that you prefer more or less cranberries and almonds.

 

Ingredients:

Half a large cabbage

200grams roasted almond halves

200grams dried cranberries

1 tsp dried onion flakes

2tbsp raisons

 

For the dressing:

Juice of 2 lemons

1tsp salt

1tbsp oil

 

 

You can use any oil you like, I prefer canola oil. The quantities can be changed according to your individual taste.

 

Method:

Discard the outside leaves of the cabbage. Shred the cabbage.

Add the almonds, cranberries, raisons and dried onion flakes.

 

Dressing:

Mix the lemon juice with the salt and oil then add to the salad and mix well.

 

Very quick and easy salad which goes with everything.
