Snow Pea and Zucchini Salad

A tantalizing combination of snow peas and zucchini briefly barbecued and served with a delicate yet tangy rice wine vinegar and sesame dressing. Add some toasted sesame seeds to amplify the sesame overtones.

Ingredients:

  • 250g of Snow Peas
  • 4 Zucchini
  • 2 Tablespoons of Soy Sauce
  • 1 Tablespoon of Rice Wine Vinegar
  • 1 Tablespoon of Olive Oil
  • 1 Tablespoon of Water
  • 2 Teaspoons of Sesame Oil
  • Salt Flakes (for seasoning)
  • Freshly Ground White Pepper (for seasoning)

Method:

  1. Rinse, trim and finely shred the snow peas and the zucchini
  2. Into a jug add the rice wine vinegar and the sesame oil, season with salt flakes and freshly ground white pepper and stir well to combine before setting aside
  3. Put the shredded snow peas and zucchini into a bowl and stir to combine
  4. Preheat BBQ hot plate to medium
  5. Cover warmed hot plate with oil
  6. Add the snow pea and zucchini mixture and toss for 1 minute
  7. Drizzle water over the snow peas and zucchini
  8. Invert a large stainless stain bowl and use it to cover the vegetables and cook for another minute or until the snow peas and zucchini are just tender
  9. Transfer vegetables to a serving platter
  10. Drizzle the snow peas and zucchini with the soy sauce mixture and serve immediately

Try adding an additional sprinkling of crunchy toasted sesame seeds
