Snow Pea and Zucchini Salad

A tantalizing combination of snow peas and zucchini briefly barbecued and served with a delicate yet tangy rice wine vinegar and sesame dressing. Add some toasted sesame seeds to amplify the sesame overtones.
Ingredients:
- 250g of Snow Peas
- 4 Zucchini
- 2 Tablespoons of Soy Sauce
- 1 Tablespoon of Rice Wine Vinegar
- 1 Tablespoon of Olive Oil
- 1 Tablespoon of Water
- 2 Teaspoons of Sesame Oil
- Salt Flakes (for seasoning)
- Freshly Ground White Pepper (for seasoning)

Method:
- Rinse, trim and finely shred the snow peas and the zucchini
- Into a jug add the rice wine vinegar and the sesame oil, season with salt flakes and freshly ground white pepper and stir well to combine before setting aside
- Put the shredded snow peas and zucchini into a bowl and stir to combine
- Preheat BBQ hot plate to medium
- Cover warmed hot plate with oil
- Add the snow pea and zucchini mixture and toss for 1 minute
- Drizzle water over the snow peas and zucchini
- Invert a large stainless stain bowl and use it to cover the vegetables and cook for another minute or until the snow peas and zucchini are just tender
- Transfer vegetables to a serving platter
- Drizzle the snow peas and zucchini with the soy sauce mixture and serve immediately
