Spiced Roasted Aubergine

PREPARATION TIME: 5 MINUTES COOKING TIME: 30 MINUTES SERVES 4

2 aubergines, halved and cut into

wedges

2tbsp olive oil

1tbsp Moroccan spice mix (we like

Ras-el Hanout, see left)

large handful rocket leaves

for the yogurt dressing:

4tbsp low-fat natural yogurt

1 garlic clove, crushed

juice 1 lemon

Heat the oven to 180 C, 160 С fan. 350 F, gas 4. Toss the aubergines with the oil and spice mix, season and roast for 30 minutes, or until softened and slightly charred.

2  Meanwhile, mix the yogurt with the garlic and lemon juice, and season. When the aubergines are cooked, allow to cool slightly before tossing with the rocket and drizzling with the yogurt dressing.

Per serving: 73 calories, 6g fat (ig saturated), 3g carbohydrate
