Spring Apple, Chicken, and Stilton Cheese Salad
This is a very healthy and tasty salad to be enjoyed by a family for a dinner or lunch or by a group gathering. Contains: Chicken, Salad, Apples, and Stilton cheese.
Eating salads daily is one of the healthiest habits you can adopt. Eating salads provides you with your helping of fruit and meat (if you’re following this recipe which contains chicken).
This following recipe provides you with almost 30 grams of protein, 5 grams of fiber, and a calorie count more than 4x less than the normal meal you would get a fast food restaurant.
One of my favorite salad recipes is “The Spring Apple, Chicken, and Stilton Salad”.
To make this extravagantly delicious and enticing salad you will need:
- 2 Boneless, skinless, chicken breast about 5 or 6 ounces
- 1 Package of baby spinach, about 5 ounces
- 1 Large apple, halved, cored, and thinly sliced (I prefer Braeburn apples)
- 1 Cup of toasted pecans or walnuts (I prefer pecans but it’s preference)
- ½ Cup of Balsamic Vinaigrette (Light also works to make it healthier)
- 2 Ounces of crumbled Stilton cheese about a ¼ of a cup
The preparation time (about 10 mins) and the cook time (10-14 mins) deems this recipe perfect for a quick healthy meal. To make this amazing hybrid salad which fuels the consumer with a fruit, vegetable, meat and LDL cholesterol lowering supply of nuts.
To prepare this dish follow these steps:
- Get a large grill pan (or skillet) and coat it with cooking spray to keep from sticking. Cook chicken 5-6 minutes per side on medium heat (until a thermometer reads 165 degrees). When done, remove from heat and cut into strips suitable for one-bite consumption and set them aside.
- In a large salad bowl, combine the spinach, apple slices, nuts and vinaigrette; toss the ingredients to full coat with dressing (you may add more vinaigrette if not sufficient but will vary the calorie count slightly). Spoon the salad out on plates and season with salt and pepper to taste.
- Top each of the salad helpings off with an even helping of chicken and approximately 1 tablespoon of crumbled cheese. You can the drizzle with optional additional vinaigrette and serve.
This above recipe serves for but can be made for additional people by simply mutliplying the ingredients accordingly (for 8 multiply ingredients by 2)
The calorie count for this meal is:
420 calories with 28 grams of fat.
