Stuffed Appetizers

These cocktail cream puffs will hold a wide variety of fillings. Give them a try for your next entertainment event.

Make the Puffs

3/4 cup water

6 tablespoons butter

3/4 cup flour

3 eggs

Bring water and butter to a boil.  Reduce heat and add flour all at once.  Stir until thick and mixture forms a shiny ball (about 1 minute).  Remove from heat.  Add eggs, one at a time, beating well after each addition.  Mixture should be satiny and paste-like.  Drop by teaspoonfuls, about 1 inch apart on a baking sheet.  Bake at 425 degrees for 30 minutes or until done.  Makes

Puff Fillings

Deviled Cheese

1 cup shredded cheddar cheese

1/4 teaspoon dry mustard

3 tablespoons mayonnaise or Miracle Whip Salad Dressing

1 teaspoon grated onion

3 to 4 drops Tabasco sauce (optional)

1/2 teaspoon celery seed

Mix together.  Split puffs and fill with about 2 teaspoons filling.  Replace top of puff. 

Ham

1  21/2 ounce can deviled ham

1  3 ounce package cream cheese

2 tablespoons milk

1 teaspoon horseradish

salt to taste

Mix ingredients.  Split puffs and fill with 1 tablespoon filling.  Replace tops and serve.

Chicken

1 can boned chicken

1/4 cup finely chopped celery

2 green onions, finely chopped

1/2 teaspoon ginger

1/4 cup mayonnaise or Miracle Whip Salad Dressing

2 tablespoons slivered almonds

Mix ingredients.  Split puffs and fill.  Replace tops and serve.

Anchovy

4 tablespoons anchovy paste

1 cup cheddar cheese, grated

2 tablespoons chili sauce

Combine ingredients and blend until smooth.  Fill puffs, replace tops and bake at 425 degrees just until cheese melts.
