Summer Broccoli, Bacon and Cranberry Salad

You’ll love this rendition of broccoli salad. It will kick your summer into some healthy fun eating! Bon Appetit.

Ingredients

  • 2 heads fresh broccoli
  • 1 red onion
  • 1/2 pound uncured turkey bacon
  • 3/4 cup dried cranberries
  • 3/4 cup pecan pieces
  • 1 cup mayonnaise
  • 1/2 cup brown sugar
  • 3 tablespoons white wine vinegar
  • 1 tsp orange zest
  • 1/4 tsp pepper 

Method

  1. Cook bacon in a skillet pan over medium high heat until evenly toasted. Cool and crumble.
  2. Chop broccoli into bite-size pieces
  3. Thinly slice onion and chop into quarter inch pieces. Combine with the bacon, cranberries, pecans and mix well.

Dressing

To prepare the dressing, mix the orange zest, pepper, mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.

For healthier salad dressing use light mayonnaise
