Summer Salad for Your Kids!

How to make a quick and delicious salad in just 10 minutes. Your kids will love it and you will be thrilled by how easy can you cook for them.
Ingredients:
2tbsp balsamic vinegar
1tsp grated orange zest
4-5tbsp good olive oil
Salt and black pepper
Selection of different salad
leaves including rocket and
radicchio, washed and dried
Large handful of seedless
green grapes, washed and
halved
3-4 spring onions, shredded
or chopped
1 firm ripe avocado
1tsp lemon juice
Method:
1 Mix together the vinegar, zest, oil and seasoning.
2 Place the leaves in a salad bowl with the spring onions
and grapes. Halve and slice the avocado then toss or
brush quickly with lemon juice.
3 Add the avocado to the salad, toss gently with some of
the dressing and chill or cover until required. Serve with
the rest of the dressing.
tip:
For added crunch or protein sprinkle with toasted seeds
and nuts, or crisply roasted corners of bread.
