Sweet and Pungent Pork

2 tablespoons salad oil
1 teaspoon salt
1 clove garlic, minced
1 pound pork, cut in cubes
1 cup chicken consomme
1 can pineapple tidbits
1 cup sliced celery
2 green peppers, cut up
2 tablespoons cornstarch
2 teaspoons soy sauce
1/3 cup vinegar
1/4 cup sugar
Heat salad oil, salt, and garlic in skillet. Brown pork cubes. Add 1/3 cup consomme, drained pineapple, green pepper and celery. Cover and simmer 15 minutes. Blend together remaining ingredients with rest of consomme and stir into skillet. Stir until mixture thickens. Serve with rice. Makes 4 servings.
