The Jelly Salad

Jelly salad, children would love it, and above all its healthy..

Ingredients

  • Lemon or orange jelly   1 Pkt.
  • Lemon juice – of ½ lemon
  • Salt and pepper  – to taste
  • Sugar – 1 Tsp, powdered.
  • Green color.
  • Cabbage -  ½ cup, shredded
  • Capsicum – 1 Tbsp, chopped
  • Grapes – ¾ cup.
  • Cucumber -  slices, with the peel.

Method

  1. Dissolve jelly in 3 cups of boiling water. Cool a little and add lemon juice, sugar, salt and pepper.
  2. Take a ring mould put a little jelly to set. When it sets partially place cucumber slices over lapping each other. Put the other rest of the jelly to set, when it is partially done then add cabbage, capsicum and grapes and pour over the set cucumber jelly.
  3. Put it in the freezer to set. Serve cold, unmould on a plate.

Fill the center with any colored fruit, or grated carrots, shredded cabbage etc.
