The Mediterranean Diet: Orange and Red Onion Salad

Note: Grapefruit or sweet lemons can be added to Mediterranean Orange and Red Onion salad.
Ingredients
*4 large sweet oranges, or a mixture of oranges, grapefruit and other citrus
*2 medium red onions
*extra virgin olive oil
*salt, freshly ground black pepper
*black olives, any type, to garnish
*flat leaved parsley
Preparation
Wash the citrus fruits. Slice off the peel, running the knife from top to bottom around the orange . Remove the white pith, as this can be bitter. Carefully slice the fruit across the width into thin slices. Peel the red onions, rinse and slice thinly across the width. Separate into rings.
Arrange the fruit slices in a layer on a serving platter. Scatter a layer of onion rings on the orange slices. Add another layer of fruit, but not out to the edge of the first layer. Leave the edge of the first layer showing. Scatter more onion rings on this layer. Repeat until the oranges and onions are used up, reducing the diameter of each layer. If any fruit or onion is left over, chop it and pile in the centre of the platter. The Orange and Onion Salad is nearly ready!
Remove the pits from the olives and slice thinly. Arrange on the salad. Drizzle a small amount of olive oil over everything. Season with freshly-ground black pepper to taste. Salt sparingly; the olives will be salty. Scatter parsley leaves as desired. Wrap the Mediterranean Orange and Onion Salad in plastic and chill until serving time.
Serve Mediterranean Orange and Red Onion Salad with Spicy Fried Chicken, Spicy Meatloaf or Traditional Glamorgan Sausages.
