The Singing Cook’s Salad

Try this easy-to-prepare and sugar-free salad.

New Year’s celebration in the city where I live is more lavishly celebrated than in the town where I grew up. There are plenty of foods in every dining table and lots of firework displays can be seen all over the place aside from the firework display on the city center. In my hometown, Christmas is the main event of the year, we also celebrate New Year but not as lavish as Christmas. On New Year’s Day, most of the townspeople are all busy working and cleaning.

During holiday season, I always prepare Buko Salad for Christmas and Chicken Macaroni Salad for New Year for dessert. Most salads are very sweet which is not healthy. For a change, try this easy-to-prepare and sugar-free salad – The Singing Cook’s Chicken Macaroni Salad.

Ingredients

  • ½ kg macaroni elbow, twisted or shell, cooked according to instruction and drained
  • 2 pieces medium-sized carrots, peeled and diced
  • ½ kg chicken breast, boiled in a water with salt and shredded about an inch long
  • 500 ml mayonnaise
  • 1 836 g can pineapple chunks
  • 2 medium-sized onion, finely chopped
  • 1 cup diced cheddar cheese
  • salt and pepper to taste

Procedure

  • In a salad bowl, combine all ingredients and mix well while adding salt and pepper to taste
  • Refrigerate and serve

You may add ½ cup raisins, ½ cup sweet pickle relish and 2 hardboiled diced eggs if you want. Best serve when chilled for three hours (or more) before serving.

    Since the dawn of time I think Christmas has been celebrated more by most cultures as originally it fell on the winter solstice. Great sounding salad. In Canada we prefer to eat hot food this time of year. I will try it in the summer!
