Three Bell Pepper Salad

Outstanding alone or with grilled shrimp, enjoy this colorful delight with a glass of your favorite red wine. Just feel great knowing you’ll slip easily into your swimwear after this meal.

Ingredients

  • 1 Red sweet pepper, remove veins and seeds & slice thinly
  • 1 Yellow sweet pepper, remove veins and seeds & slice thinly
  • 1 Green bell pepper, remove veins and seeds & slice thinly
  • 2 cups cherry tomato’s halved
  • 1/4 of a Red onion thinly sliced
  • 1 large garlic clove crushed 
  • 1/2 tsp Himalayan Pink salt  or sea salt to taste
  • 1/2 tsp Freshly ground black pepper
  • 2 Tbs balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1/4 crumbled feta cheese

Method

  1.  Blend vegetables together.
  2.  In a seperate bowl whisk together, salt, pepper, vinegar, olive oil, and feta cheese. 
  3.  Lightly toss and allow to marinate in refrigerator for 1 hour before serving.
