Three Bell Pepper Salad

Outstanding alone or with grilled shrimp, enjoy this colorful delight with a glass of your favorite red wine. Just feel great knowing you’ll slip easily into your swimwear after this meal.

Ingredients
- 1 Red sweet pepper, remove veins and seeds & slice thinly
- 1 Yellow sweet pepper, veins and seeds & slice thinly
- 1 Orange sweet pepper, veins and seeds & slice thinly
- 2 cups cherry tomato’s halved
- 1/4 Red onion thinly slice
- 1 large garlic clove crushed
- 1 cup fresh basil leaves coarsely chopped
- 1/2 tsp Sea salt
- 1/2 tsp Freshly ground black pepper
- 1 Tbs red wine vinegar
- 1 Tbs extra virgin olive oil
- 1/4 crumbled feta cheese
Method
- Blend vegetables together.
- In a seperate bowl whisk together, salt, pepper, vinegar, olive oil, and feta cheese.
- Lightly toss and allow to marinate in refrigerator for 1 hour before serving.
