Tomato and Feta Pasta Salad

This recipe is great as a stand alone lunch recipe or served alongside chicken, pork, steak, etc..

Pasta Ingredients:

1 box of spiral pasta
1 tsp olive oil
1 tsp kosher salt
2 ripe tomatoes, diced
¾ cup of small pitted and diced black olives
1 lb of feta cheese, diced
6 sun dried tomatoes, chopped.

   
Dressing Ingredients:

3 tbsp red wine vinegar
7 tbsp of olive oil
7 sun dried tomatoes
2 cloves of garlic, peeled.
1 tsp of capers
1 tsp of sea salt
¾ tsp of cracked black pepper

Garnish Ingredients:

1 cup of freshly chopped parsley
¼ cup of freshly chopped chives
1 cup of parmesan cheese 

Method:

1. Cook pasta as directed. Add the olive oil to the boiling water to keep pasta from sticking.
2. Drain cooked pasta and set aside to cool. You can use an ice bath or run cold water over the pasta to help it cool and stop the cooking process if you are in a rush.
3. After pasta is cooled, mix in all the other ingredients under the pasta section above.
4. Combine all the ingredients under “dressing” in a food processor. Process until smooth.
5. Pour the dressing over the pasta and mix well. 
6. Sprinkle the pasta with the “garnish” ingredients.
