Baked Potato Wedges with Thyme

There is little doubt that as a dish, potato wedges are right up there when it comes to the number of attempts at over-complication/over-sophistication that fail oh so dismally.

For this potato wedges recipe I am going to keep it really simple because all too often a good thing is ruined or at the very least diminished by attempts to over-sophisticate that which is inherently simplistic in nature.

Uncomplicated

Unfortunately potato wedges are but one of the many dishes that seem to attract more than their fair share of misguided, failed attempts to over-complicate. So let us avoid those mistakes typically made by the overly-zealous by getting back to our roots and keeping it simple and uncomplicated.

Budget Conscious

Potato wedges are super easy to make and by adhering to our simplistic approach we will in fact be helping those on a tight budget to really stretch their dollar further without having to make a sacrifice in other areas.

Potato Selection

While you can use baking potatoes for this recipe I preferred to use new potatoes (baby or otherwise)

Ingredients

  • 3 Medium-Large Baking Potatoes or 8 Medium New Potatoes
  • 2 Tablespoons of Olive Oil
  • 1 Tablespoon of Dried Thyme
  • Salt and Pepper (to taste)

Preparation

  1. Preheat Oven – Start by preheating the oven to 400 degrees
  2. Prepare Potatoes – While the oven gets up to speed wash your potatoes. Then cut your potatoes into even wedges. Transfer them to a bowl as you go.
  3. Remaining Ingredients – Add all of the remaining ingredients (olive oil, thyme, salt and pepper) to the same bowl that you put the potato wedges into.
  4. Tossing – Then toss and stir everything a little at a time to ensure that the potato wedges are coated on all sides.
  5. Cookie Tray – Line a cookie tray with parchment paper
  6. Don’t Overcrowd – Place a single layer of potato wedges onto the baking tray remembering not to overcrowd the tray as this will result in a more even cooking of the potatoes.
  7. Baking – Put tray and potato wedges into oven and bake at 400 degrees F until the potato wedges become a golden brown (30 to 45 minutes)
  8. Turning – Do not forget to sporadically turn your potato wedges as this is critical to the end result (nice crispy potato wedges).
  9. Baking – Baking time will depend on the heat of your oven and whether or not it is a fan forced oven or a conventional oven.
