Beer Battered Asparagus with Aioli Dipping Sauce
I get it you- you don’t like asparagus, can’t get the kids to eat it, or just don’t know what to do with it! I am not an asparagus lover myself, but this asparagus recipe has changed my tune.

Ingredients For Beer Battered Asparagus:
15 to 20 asparagus stalks.
Canola oil
2 c. buttermilk
1 egg
¾ c. pale ale beer
¾ c. white cornmeal
¾ c. flour
½ tsp red pepper
½ tsp black pepper
¼ tsp sea salt
Sea salt to taste
Parmesan cheese to taste
Ingredients for Aioli Dipping Sauce:
1 c. mayonnaise
1/3 c. fresh lemon juice
Zest of 1 lemon
½ tsp spicy brown mustard
5 tbsp of finely minced garlic
¼ tsp black pepper
¼ cup of chopped chives
¼ tsp salt
Method:
1. Soak asparagus overnight in buttermilk.
2. Mix all ingredients for aioli dipping sauce with a food processor. Cover and store in fridge.
3. Preheat oil to 350 degrees in a large frying pan or electric fryer.
4. In a large bowl, combine egg, beer, flour, cornmeal, salt, black pepper, and red pepper until batter forms.
5. Dip spears, one at a time, into batter, and drop into oil.
6. Fry asparagus in small batches for two to three minutes or until golden brown.
7. Sprinkle with sea salt to taste.
8. Sprinkle with parmesan cheese to taste
9. Serve with aioli dipping sauce.
