Brinjal in Tamarind Sauce

It is simple. Care to try it?

Ingredients

  • A brinjal
  • A handful of ripe tamarinds
  • A teaspoon of salt
  • Sugar
  • A tablespoon of oil
  • A teaspoon of roasted and ground mixture of  aniseeds, sesame seeds, fenugreek seeds, mustard seeds  or whatever available for flavoring.

Method

  1. Dice the brinjal into small cubes.
  2. Heat oil in a pan and lightly sauté the brinjal cubes.
  3. Boil the tamarind in about two cups of water and remove the seeds.
  4. Extract the pulp.
  5. Pour this onto those brinjal cubes in the pan and heat till brinjals are tender.
  6. Add salt and enough sugar to mitigate the sourness of tamarind
  7. Garnish with the teaspoon of flavoring mixture.

It should be served with some spicy dish
