Brinjal in Tamarind Sauce

It is simple. Care to try it?
Ingredients
- A brinjal
- A handful of ripe tamarinds
- A teaspoon of salt
- Sugar
- A tablespoon of oil
- A teaspoon of roasted and ground mixture of aniseeds, sesame seeds, fenugreek seeds, mustard seeds or whatever available for flavoring.
Method
- Dice the brinjal into small cubes.
- Heat oil in a pan and lightly sauté the brinjal cubes.
- Boil the tamarind in about two cups of water and remove the seeds.
- Extract the pulp.
- Pour this onto those brinjal cubes in the pan and heat till brinjals are tender.
- Add salt and enough sugar to mitigate the sourness of tamarind
- Garnish with the teaspoon of flavoring mixture.
It should be served with some spicy dish
