Buttered Vegetables

A colorful and healthy all-vegetable dish.

This is a quick, easy and healthy side dish.

Ingredients:

  • 3 medium potatoes, cubed (optional)
  • 1 medium cauliflower, sliced
  • 1 medium broccoli, sliced
  • 3 medium carrots, cubed
  • 1 small can sweet yellow corn kernels
  • 4 oz butter
  • Pinch of salt (optional)

Method:

1. In a shallow pan, boil potatoes until tender.

2. Add cauliflower, broccoli and carrots.

3. Add salt and turn off heat when it boils again.

4. Remove water and add corn and butter.

5. Mix ingredients until the butter melts.

6. Serve warm.

* Olive oil can be used instead of butter.

** Vegetables can be steamed instead of boiled.
