Cashew Fruit Squash

Try this recipe.

Ingredients

  • Cashew fruit – 8 big
  • Or 1 cup juice
  • Sugar – 2 cups
  • Water 1 ½ cups
  • Citric acid – ½ tsp
  • KMS – ¼ tsp
  • ( Potassium meta bi sulphite)

Method

  1. Select ripe fruits, wash and then put in hot water for 10 minutes. Remove the fruit and blend it in mixer. Strain well and then measure.
  2. Prepare sugar syrup by heating sugar, water, citric acid to boiling point. Cool down and filter the syrup. Add juice and mix well. Dissolve KMS with little water and add to the squash. Fill in sterilized bottled leaving 1 inch space.
  3. While serving dilute with three parts of chilled water.

    Interesting…but must confess I’ve never heard of Cashew Fruit nor KMS…but lots of others have and are indicating that it sounds like a delicious refreshment!

    when i was born

    even now sweettoothed
    i can eat a million cashew nuts

    no not roasted but minced like meat

    Ferment the stuff and you get the Goan alcoholic drink “Feni”. My childhood in Kerala gave me a taste of the Yellow, Orange and Red fibrous Cashew fruit.
