Cheesy Potato Skin Recipe

These cheesy potato skins are the perfect combination of delicious cheddar cheese, bacon and potato. They have a wonderful mix of delightful flavors, that are sure to be a hit at Your next family occasion. Making these homemade potato skins are really easy and they taste a lot better then those frozen store bought ones were all accustomed too.
Ingredients
- 3 baking potatoes (scored into quarters)
- 1 teaspoon vegetable oil
- 2oz lean smoked back bacon (roughly chopped)
- 4oz cream cheese (softened)
- 2 tablespoons milk
- 1 1/2 teaspoons wholegrain mustard
- 2oz Cheddar cheese (grated)
- sour cream (to serve)
Preparation
Start by preheating the oven to 400°F. Then put the potatoes in a baking dish, and bake in the oven for one hour or until cooked. Meanwhile, heat the oil in a frying pan over a medium heat, and saute the bacon until cooked. Then blend the cream cheese, milk, mustard and half of the Cheddar cheese in a bowl.
When the potatoes are cooked, quarter them and scrape out the inside, leaving a thin layer of potato on the skin. Put the potato flesh to one side. Place the potato skins on a baking tray, and return to the oven for five minutes.
Now mash the removed potato flesh, and stir into the cheese mixture with the cooked bacon. Pile the mixture into the potato skins, and sprinkle the remaining Cheddar cheese over the top. Finish by returning the potato skins to the oven for about ten minutes or until they’re a golden brown and serve with a side of sour cream.
