Chef Lauren’s Sensationally Awesome Yam Fritters

A Vegetarian delight for the most pretentious palates.

Ingredients:

  • 1 ½ lbs yams (peeled fresh)
  • 2 small eggs, beaten
  • 3 Tbsp chopped plum tomato
  • 3 Tbsp chopped scallions
  • 1 green chili sliced and seeded
  • 1 ½ bread crumbs
  • Vegetable oil
  • Salt
  • White pepper

Method:

  1. After peeling and cutting yams into chunks, boil them until tender.
  2. Drain the yams and mash with 2 Tbsps of egg and 2 Tbsps milk.
  3. Add the chopped scallions, tomato, chili, and seasoning to taste.
  4. Flour your hands and shape the mix into round patties measuring about 2 ½ to 3 inches in diameter.
  5. Dip the patties in the remaining egg wash and coat evenly with the breadcrumbs.
  6. Sauté in a large frying pan with the vegetable oil. There should be about ½ inch of oil in the pan.
  7. Cook each patty for 5 minutes making sure you turn them at least once.
  8. Drain on cheesecloth or papertowel.
